October Recipe Garlic Shrimp Scampi
I have been on a seafood kick for the past few weeks and I am finding creative recipes to incorporate to my standard go-to’s. October’s recipe that I decided to share is none other than garlic shrimp scampi. Shrimp scampi is a quick, easy, light dish that pairs well with any type of pasta.
What you are going to need to create this deliciousness:
Shrimp (I used frozen raw peeled deveined tail on or off is a personal preference)
Spaghetti noodles (Whatever noodle you prefer)
Fresh Parsley
Salt and Pepper
3 tablespoons of olive oil
3 tablespoons of unsalted butter
2 tablespoons of garlic minced
1 lemon
Parmesan Cheese (Optional)
Steps:
Start by boiling salt water and add spaghetti noodles to pot as this will take the longest to cook.
In a skillet add olive oil and unsalted butter and let butter melt. As soon as butter melts add garlic and stir. After stirring in garlic add fresh fine cut parsley. Let sit for about 30 seconds then stir.
With the thawed out shrimp add salt and pepper and mix well. Add shrimp to skillet with the butter and garlic mixture and let sit. Shrimp doesn’t take that long to cook let the shrimp cook for about 4 minutes. Turning once halfway through.
Cut lemon in half and use half the lemon and squeeze over shrimp.
At this point your pasta should be done. If you haven’t at this point drain your pasta and run cold water over noodles so they don’t stick. Once drained add pasta to your skillet and mix your noodles in with everything.
After mixing, squeeze a little more lemon on top and add more fresh parley as a garnish. I also add a little parmesan cheese however, this is not required just a preference that I sometimes prefer.
