Eating Healthy During Quarantine

With this quarantine order in large across the country it can be hard to eat healthy during this time of uncertainty. We are thinking about preserving getting items with longer shelf life, and typically these items are items that are not healthy. After a week of eating a lot of snack foods high in sugar I decided to go to the grocery store and try to make some fun healthy meals. The meal that I am going to highlight in this post is my infamous Salmon Fruit Salad. I even took it a step further with this meal I made my own dressing! I shocked myself with that one.

Amber’s Infamous Salmon Fruit Salad (As pictured)

1 Salmon fillet (I buy the salmon with the skin on it, feel free to cook the salmon however you see fit)

Brown Sugar (For Salmon)

Butter (melt with brown sugar for glaze)

1 Mandarin Orange

1/2 cup of Blueberries

1/2 cup of Blackberries

3 Strawberries thinly cut

1 Cucumber cut up

1/2 Avocado cut in slices

1/4 Cup of Cherry Tomatoes

1/4 Cup of Red Onion

1/4 Cup of Feta Cheese

1 Cup of Spinach

1 Cup of Mixed Greens

Blackberry Vinaigrette

1-2 Cups of Blackberries (Mash up and Drain)

1/4 Cup of White Wine Vinegar

1/4 Cup of Olive Oil

1tbs of Minced Garlic

1tbs of black pepper

1tbs of brown sugar (for taste)
