Simple Chia Seed Pudding

Back with another simple recipe that is jam packed with fiber and protein. Chia Seed Pudding. While I have know about Chia Seed Pudding for sometime now I was formally introduced to it a couple years ago at Real Good Juice Co here in Chicago. I bought a few of their pre-made chai seed puddings to eat as a quick breakfast and the rest is history. With a few simple ingredients that some will have lying around their house you can make this 4 ingredient dish. I personally eat the Chia Seed Pudding for breakfast however, you can consume any time of day as well as eat as a snack or dessert!

Ingredients:
1/2 Cup of Chia seeds
1 1/2 cups of dairy-free milk (I use Almond Milk, however feel free to use coconut or cashew)
1-2 tbsp agave (you can use maple syrup more or less to taste)
1 tsp vanilla extract
Instructions:
You are going to need a mixing bowl. Add dairy free milk, chia seeds, agave (to taste) and vanilla. Whisk to combine.
Pour contents into a refrigerator safe bowl with lid and refrigerate overnight (at least for 6hours). The chia seed pudding should be thick and creamy. If not, add more chia seeds, stir, and refrigerate for another hour or so.
Enjoy as is, or layer with fresh fruit! Will stay fresh for up to 5 days.
I forgot to mention this is gluten-free and vegan!
